With tableware being reused multiple times a day, food premise operators have a duty of care to customers, ensuring that the plates, cups, glasses and cutlery used are germ free.

In this post, we look at the critical role to be played by the cleaning chemical supplier.
Delivering clean, germ-free tableware requires a combined effort on the part of the food premise operator, dishwashing machine manufacturer and cleaning chemical supplier. Unfortunately, they invariably don’t work closely enough together.
Problems with wash results are routinely directed towards the chemical supplier in the first instance because, in most cases, they will visit the site free of charge, whereas the machinery company will routinely charge for the visit. At Arpal Gulf, we are only too happy to collaborate with machinery suppliers to work in the best interests of our mutual customers, the busy food premise operator.
With new dish and glass washers ranging in price from AED 6,000.00 to AED 150,000.00+, a significant capital outlay, it makes sense to have a preventative maintenance programme set up from the outset. Pumps need maintained, peristaltic tubes need changed, heating elements will degrade and fail over time. Likewise, essential parts such as wash jets, rinse jets and door seals should be maintained and replaced as required.
The dish and glass washer needs to be cleaned like any other piece of catering equipment or surface. It is essential that the machine is thoroughly cleaned inside and outside after each session.
The following procedure should be followed:
- Shut off the machine at the mains supply and not just on the machine.
- Open the drain plugs to empty the machine completely.
- Remove the curtains and clean with a degreaser/sanitiser.
- Remove both wash and rinse arms and clean out all debris.
- Remove scrap trays and clean out all debris.
- Thoroughly clean the inside of the machine with a degreaser/sanitiser and rinse thoroughly.
- Replace scrap trays, wash and rinse arms and curtains.
- Shut doors and switch on and allow the machine to heat up to correct working temperature
- Ensure no broken parts (like missing wash & rinse jets for example)
- The machine should now be ready to operate.
The importance of good service from your chemical supplier
Good ongoing engineering support is critical to achieving consistent, high quality dishwashing results. There is little point in having a modern dishwashing machine fitted if it is not installed, maintained and programmed correctly. Reliable engineers offering preventative maintenance support can ensure that problems are avoided rather than reacted to.
Dishwashing machines in busy UAE restaurants work hard, very hard. There will be wear and tear on the equipment, which will eventually impact tableware cleanliness. Regular service calls and preventative maintenance checks can highlight impending problems, be fixed on the spot and avoid problems further down the line.

The customer, too, has an important role to play. When a problem arises, it should be reported as quickly as possible to the manufacturer so that it can be quickly resolved. Delays can lead to more serious and costly problems so both the chemical supplier and customer should share the responsibility of maintaining standards to the very highest level.
